1 oz. olive oil
4 hot links all beef cut in 6 slices diagonal
20) shrimp 21/25 count deveined shelled - butterflied
2 c. heavy cream
1 c. chipotle sauce (see recipe
1/2 tsp. sea salt
1 tsp. garlic granular
1/2 tsp. ground black pepper
1 lb. penne pasta cooked
3/4 c. Romano grated plus more for serving
1 Roma or plum tomato diced
2 green onions diced with stems
Start cooking penne –al dente in boiling salted water-ñ drain
Using skillet - high heat- add olive oil ñ hot links. Sear links until browned. Turn heat down little-Add shrimp ñ cook until pink- add cream- some of the chipotle sauce to ur liking- salt – pepper ñ garlic. Add cooked pasta ñ cheese. Mix well.
Serve in pasta bowl - garnish with diced tomato- onions more sauce on the side ñ grated cheese.
~Chipotle Sauce
1 ½ c. BBQ sauce
3/4 c. olive oil
1/8 c. lemon juice or lime juice to ur taste using more or less
¾ oz. Dijon mustard
1 to 2 chipotle peppers in adobo sauce
little red chili flakes sprinkle to taste
dash cayenne pepper
1/8 tsp. ground black pepper
Combine all ingredients in blender- purée- cover ñ refrigerate.
This is very hot so choose more or less or none of cayenne ñ red crushed pepper flakes.
