Last Spring I managed to pick enough Dew Berries for a couple of 24oz containers.
I washed them and then boiled them with sugar according to taste and put in freezer.
Today I decided to try a new recipe for Cobbler made from Jiffy Baking Mix. It make a
Cake type Cobbler rather than a Pie Crust type and my "quality control" Cobbler expert said it was good.
Ingredients:
1 1/2 cups of (sifted) Jiffy Baking Mix
1/2 cup of sugar
1/2 cup of milk (I used Pet evaporated)
2 tblsp melted margerine
1 egg (slightly beaten)
3 4o 4 cups of "sweetened" Berries or Fruit of your choice.
Preheat oven to 400 degrees, cover the bottom and sides of a large pie pan or baking dish with margarine.
Sift Jiffy Mix into a large bowl, add sugar and mix well, add egg, milk, melted margarine and stir until all
ingredients are smooth and well mixed. Pour batter into the pie pan or baking dish and spread evenly.
Drop small spoons of fruit filling around the entire surface until well covered.
Note: you want there to be spaces of batter showing in between the fruit.
Place in oven and bake for 15 minutes at 400 degrees. Remove from oven and
sprinkle some sugar on top of the cobbler, turn oven down to 350 degrees and bake
for 10 more minutes or until the top is golden brown.
Note: this is more of a cake with fruit than a gooey pie dish.
Remove from oven, let cool and remove servings with a large spoon.
Note: You can top with Cool Whip or that "Homemade White Stuff" from the Little Creamery in Brenham, if so desired.
