My Pumpkin Bread

Postby Smoked » Thu Nov 15, 2007 6:56 pm

I have made this for Friends, family & co-workers for years...Its not so much as a dessert as it is just plain Good... I like a slice of it in the morning with a hot cup of Joe..

I hope you guys make a loaf this next week..

3 1/4 C Flour
3/4 C Old Fashioned Oats
2 Tsp Baking Soda
1 1/2 Tsp Pumpkin Pie Spice
1/2 Tsp Baking Powder
1/2 Tsp Salt
3 Eggs
1 Can Pumpkin 15-16oz
1 1/2 C Sugar
1 1/2 C Brown Sugar
1/2 C Water
1/2 C Oil
1/2 C Evaporated Milk
1 C Chopped Walnuts or Pecans Opt.

Mix all dry ingredients in a Large bowl. Mix all wet ingredients in a separate bowl...Slowly blend the wet ingredients into the dry...Trying not to have any lumps.. Add nuts at this time if you wish.. This will make 2 loaf pans 9x5 or 6 mini loaf pans 6x3 Cook at 350*65-70 Min for the large pan and 40-45 for the mini pans..

When done set pans a side for 10 min. before removing pan..

Enjoy..

Thanks!! I roasted a large pumpkin to use for breads on Sunday and a small sugar pumpkin for a pie along with them. I've been looking at different pumpkin bread recipes trying to decide which would be best. I have enough pumpkin puree to make a bunch of bread! lol
