Hey Y'all, there is a dry box mix by Krusteaz called Cranberry Orange Muffin Mix that can be done in a loaf pan which is how we like it. You just add 2 eggs, 1/2 cup water and 1/3 cup Canola to the dry mix dump in the cranberries and bake at 350 for less than an hour. There is also a fat free mix (shown below) that "Only" requires water and we actually like it better.
However, today I used the Muffin Mix because that's what the Wiffy picked up. This loaf will not last the day.

replace the oil in most any recipe with applesauce especially in the cranberry cakes...now you have a "better for you" desert.
we have subbed chocolate cake and numerous others with good results.
