Had this at a churrascaria while working in Brazil recently. I liked it so I had to google up a recipe and try it myself. It's simple and I think it's good... Me the wife and kiddos already ate half of the double batch we made up... This was all that is left.
Here is the recipe I used:

Quindim
Ingredients
* butter and sugar
* 8 egg yolks
* 1 cup freshly grated coconut
* 1 cup sugar
* 1 tsp. vanilla essence
* 1 Tbsp. butter
* 1/4 cup coconut milk.
Instructions
Preheat the oven to 375F. Grease ramekins and sprinkle side and bottom with sugar.
Mix all the ingredients together with an electric or hand mixer. Spoon into the ramekins. Put in a deep pan, pour 1/2" of water into the pan and cook in the water bath until the top browns, about an hour.
Notes: Next time, I'll reduce the oven temp to 350° and start checking for doneness at around 45 mins. Instead of individual ramekins, we just used a cup cake pan set into the water bath.
