2) 8 oz. pkgs. cream cheese softened
3/4 c. sugar
2 eggs
1 T. lemon juice
1 tsp. pure vanilla
36 vanilla wafers thesmall circular vanilla cookies
1) 21 oz. can cherry pie filling
Beat 1st five ingredients until light n fluffy. Line small muffin pans with paper baking cups n place a vanilla wafer cookie in each cup. Fill cups 2/3 full with cream cheese mixture.
Bake 375 degrees F. 15 to 20 minutes or until set. Top each with 1 tablespoon of pie filling. Chill. 3 dozen
Notes ~Perfect for indiviual servings-freeze other ones for later use. Use any pie filling you might like.
