I never have smoked cabrito either, but 25 or so years ago an old rancher who lived here all his life and is now deceased put his recipe in the paper:
Luther Jernigan's Cabrito
20 pounds young kid goat
1 cup Salt
1 Tablespoon Dry jalapeno (ground)
1 Tablespoon Black pepper
1 teaspoon ground Cumin
BARBECUE SAUCE
2 cups Sugar
1 cup prepared mustard
½ cup apple cider vinegar
1 teaspoon salt
1 teaspoon black pepper
Mix salt, jalapeno, black pepper and cumin. Sprinkle meat generously. Cook slowly on grill 2 hours (or less depending on cut of meat). Be sure meat is well above fire (at least 20 to 24 inches). Meat may be brushed with cooking oil occasionally to prevent dryness. While meat cooks prepare sauce. At least 30 minutes before removing from fire; brush meat with sauce. Continue cooking and turn the meat often, brushing on sauce at every turn.

I cook goat just like ribs, I rub it the morning over the cook, put it on , spritzing with apple juce about every 1/2 hour. cook until meat pulls from bone easily...then insert into tortillas with fresh pico on top...

I can't buy goat meat around here, but the Auction Barn here sells hundreds of them every Friday if you wanted a live one or two.

Come on Stan! You live in the goat capital of the world, are sittin on top of the Mills co. Goat Cookoff in April and you can't buy goat meat. What the heck are they dealin in over there at Schwartz's? Just "kid"ding.

You are right! Lots of goats here, but nobody eats goat on a regular basis and very few on an irregular basis. I like goat OK, but can't stand sheep meat.
Reminds me of a lady who moved here from Spain. She just could not believe with as many sheep as there are around here that she couldn't buy mutton in any grocery store within driving distance.
