hi
I am looking for a sauce or recipe for a vinegar based sauce like Underwood's BBQ used to use. I don't care for the sweet sauces with the brown sugar, molasses and honey. I have tried every brand that I can find in the stores but all are sweet.
I also like mild sauce, not hot.
Underwood's sauce was so good that after I had finished my meal I would get four or five slices of bread and eat them with sauce
Any suggestions? Thank

I use a twist on Steve Raichlen's Lexington style Vinegar sauce found in his book BBQ USA. It has a bunch of others you might want to try. Basically its Apple Cider Vinegar, water, ketchup and a lot of pepper, from black to red to white to bottled and a tad of sugar.

I use a N. C. style vinegar style sauce I think is pretty good just ask Cowboy Don. any way heres the recipe:
1 1/2 cups cider vinegar
10 tbl ketchup
1/2 tsp cayenne pepper
1/2 tsp red pepper flakes
1 tbl white sugar
1 tsp black pepper
1 tbl salt
1/2 cup boiling water.
Place all dry spices in a small bowl and ad the boiling water allow to step 15 min add to the wet stuff bottle and shake for 1 min. apply liberally to all manor of bbq.

Never met a cow I didn't like with a little salt and pepper.
