Smoked Cracklins?

Postby wigelnyatt » Wed Sep 15, 2010 3:20 pm

I just bought a big pork loin. (I like to cut my chops to the size that I want them!) This bad boy had alot of fat!
I trimmed up my chops. I'm thinking cracklins. Anybody have pointers on smoking cracklins?

No pointers on smoking them . But have fried many and eaten many more. CF :D
I think if I wanted them smoked I would crisp them by frying. Then give them some smoke.

There is a small Q joint in Houma, LA that sells regular cracklins and smoked cracklins - the smoked ones also have a little seasoning - I like em a lot. I have seen the big CI pot they fry them in but haven't asked how they get smoke on them. I think I would put some smoke on them after they are fried.

Let us know how they come out.

Will do...I have an outdoor propane fryer...maybe I will try the fry first & then add the smoke. Thanks for the input
