I haven't tried it but sounds like you have a good plan - should be nice spread on a piece of crusty bread.
Let us know how it turns out - might try it myself

Re: smoked/ roasted garlic
I would just squeeze it a bit and when the garlic feels soft or when the garlic pods squeeze out, it should be done.
Seems like I did his in an oven at 350 a long time ago and it was around an hour - maybe 1-1/2 to 2 hours slow smoking say at 250 pick up some extra smoke.
I think I'll try this weekend - slice in half, drizzle with EVOO, and dust with some Hoochie Mama.

Yeah, I do it all the time on a Hasty Bake. I follow the typical oven recipe and just like NewCountry, I cut the top so the cloves are exposed. I spray the tops with olive oil, grind some pepper on the tops, maybe a little kosher salt and other spices. I then wrap loosely in aluminum foil, and I mean basically pull it over the tops and fold over twice leaving a lot of room inside. Bake until tender, then I open the top and leave open for another 30 min or so. It usually takes about 2 hours at 300F or so. I've also done it on the Klose when I had a bunch of other stuff on already. But I prefer to fire up the HB with a small load of charcoal instead of heating up the kitchen with an oven.

Put some on the mini weekend before last - just about like New Country said. Drizzled with a little EVOO and some smoked chipolte rub a friend sent me. I put some smoke on them but can't remember what I used - probably oak or pecan. Mightyfine spread
