The Mrs is a boneless/skinless chicken breast girl. Two things work.
1. If grilling, Huli-Huli is hard to beat. viewtopic.php?f=32&t=12819&hilit=huli
2. If smoking, bacon is your friend.

I'm recently a brine convert. Brine those breasts overnight and indirect grill till the hit 165. They will be dripping with moisture.
I also like chicken roulades. That reminds me - it's been to long and I need to make some again!
