These are My Favorite you will never buy a can of Bushes ever again and it is a perfect recipe to do alongside of a brisket of pork but on the the pit. This recipe comes from the Durgin park restaurant in Boston. They have been cooking them this way since the 1st tea party.

Boston Baked Beans

2 1/2-quart bean pot or covered casserole
1 pound Navy or Pea beans*
1/2 teaspoon baking soda
1/2 pound salt pork
1/2 medium onion -- peeled and uncut
4 tablespoons sugar
1/3 cup molasses
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon pepper

Soak beans overnight. In the morning, preheat oven to 325° F. Place the baking soda in a Dutch oven and fill half way with water. Bring to a boil and add the beans. Boil for 10 minutes. Drain beans in a colander and run cold water through them. Set aside.

Dice the salt pork (available in the bacon section of the grocery store)
into 1-inch squares. Put half of the salt pork on the bottom of the bean pot, along with the onion. Put beans in the pot. Put the remaining salt pork on top of the beans.

Mix the sugar, molasses, mustard, salt and pepper with 3 cups of hot water and pour over the beans. Cover pot with lid and place the pot into the preheated oven. Bake for 6 hours. Check pot periodically to check the amount of liquid. Add water to the beans slowly as needed to keep them moist; do not flood them. Remove the pot from the oven and serve.
Makes about 7 cups

Everybody loves these:

Jarhead's Bourbon BBQ Baked Beans

12 strips of thick cut bacon or 1# Pulled Pork, chopped
4 med. Onions, coarsely chopped
1 Pablano Pepper, coarsely chopped
1 Green Bell Pepper, coarsely chopped
2 Jalapeno Peppers, coarsely chopped (adjust to taste)
1 #10 can of Bush's Bean Pot Beans, lightly drained
1-1/2 C Sweet Baby Ray BBQ Sauce, Original, thinned with Apple Juice
1/2 C Bourbon (I use Kessler's)
8 Tbs Molasses or 6 Tbs Molasses Powder
4 tsp Dry Mustard
2 tsp Ancho Chili Powder
1/2 tsp Kosher Salt
1/2 tsp Ground Black Pepper
2 Bay Leaves

Options:
2 tart apples, cubed (add with the whiskey), (Granny Smith or Jonathan)
1/4 C Extra Strong Coffee, Black

Directions:
1. Cook bacon over medium heat. When it begins to brown, flip it, brown the other side. Remove it before it renders all of it's fat and gets hard. We want to cut it, not crumble it.
2. Pour off bacon fat in a coffee cup. Reserve.
3. Heat 2 Tbs Bacon Fat, add the Onions and Peppers. Cook until they wilt.
4. Then add everything else into a full size pan.
5. Smoke for about 3 hours at 225. Try to cook under a brisket for added flavor. Never cook under poultry.
6. Remove the Bay Leaves before serving.

Notes: Taste and adjust. More molasses for sweeter, more salt, cook longer if you want it thicker or add Apple Juice if you want it thinner.

Makes 1 gallon of Beans. about 1/2 of a full size pan. Get more smoke that way.
Serves about 25
