Need pinto bean help
Beans are one think have no luck with. Either taste bland with no flavor and either too watery . Want a pot of beans that the juice has some consistency and the beans are full of flavor . And with some heat to them .

Seems beans are always too mushy when I soak overnight. Try this, put them on low setting after rinsing and turn up heat to medium and hour or so later after the absorb the water. I put 2 cups o beans, 1 tbs salt, 1 tsp pepper, a 1 inch cube of salt pork and 1 tsp of Fiesta bean spice, all at the beginning while while on low. Also add 1/4 of medium sized onion, 1 serrano pepper, 1 roma tomato and 4 garlic cloves. You can also add cilantro at the very end for the charro flavor if you like. These are a very simple but fantastic beans, tweak from there to your liking.

This is my goto bean recipe for pintos it is always well received. I never soak my beans overnight and I never salt them. I use the quick soak method sort you beans remove any debris cover with 4 " of cold water and bring to a boil. Boil for 10 min remove from heat cover the pot an let them sit for 1 hr. Drain rinse It will remove most of the farts. Never salt your beans until the very end or the will be mealy, Never let them boil or they will get angry and the skin will be leathery. Always cook at a simmer, cooking at a simmer releases the starches and thickens the broth and lets the beans have a creamy feel in the mouth.
Blu's Charro Beans
1 lb. dry pinto beans
4 Tbsp. Knorr brand tomato bouillon with chicken flavor
*1 Tbsp. salt
*1 Tbsp. pepper
*1 Tbsp. garlic
1/4 lb of bacon (bacon pieces from box work also)
1/2 chopped onion
4 chopped Jalapenos
1/2 chopped tomato (if small use the whole thing)
Sort beans remove debris and use the quick soak method
Get medium size stock pot
Cut bacon into pieces and fry until crisp. (do not drain the grease)
Add onion and pepper to bacon and cook till tender.
Add tomato plus4-6 cups of water and bring to a boil
Once boiling rinse and add beans, reduce heat to a simmer cover and simmer 2-4 hs until the beans become tender
*Once the beans become tender add the Salt, Pepper & Garlic
NOTES: I sometimes add a tbl dried Cilantro at the end
If you want it a little thicker run a cup of the beans through the blender and add back to the pot.

Thanks for the info . I really like a good pot of beans . U may want to try a twist of lime on them after u bowl'em up or put em on ur plate !!!! Was at Abaloes Mexican restaurant and when the waiter brought our food he also brought us some lime wedges and said try it in the beans and it was really goooood , said that's the way his grandma does' em . I do it on charro ,

I too soak overnight and then cook in the crockpot all day. I use Fiesta Pinto Bean Seasoning and it is GREAT. I even took first place in a bean competition with them before. I can find it at most grocery stores around and also Walmart, but it isn't in the seasoning isle around here. I find it in the Hispanic isle. Add jalapenos or Sucklebusters Gunpowder for heat and I always add either bacon or a hambone in there.

cooked up some of BluDawgs beans yesterday they were really good . Had them with brisket and pork butt , didn't get any pics due to (3) pitchers of bloody Mary's

Beans are always better the 2nd day ! If u haven't tried it put a twist of lime on them when u eat them , it is good business !!!

They looked like beans lol !
Got some of ur brisket rub from CrazyD , and used on the brisket and it was a hit .
And used hog Waller and hoochie on the butt , another hit !!
