hot wings
Seems silly....I know. I just can't get them right. Will someone please let me know how to do these on the grill and make the sauce and flavor stick? Do I soak over night? I read where someone dried them and left uncovered in the fridge over night then sauced as they cooked. I've tried twice now, and while they come out with a good flavor....the hot wing flavor is just not there.

Re: hot wings
Try Frank's Original Red Hot following the directions on the bottle and then adjust flavor from there.
Alternatively this works well for me - recipe from a friend
Juice of 2 lemons
2 Tbs crushed red pepper
2 Tbs black pepper
1 Tbs cayenne pepper
4 Tbs kosher salt
2 Tbs chile powder
2 Tbs Louisiana hot sauce
1 Tbs garlic powder
2 Tbs Dijon mustard
2 Tbs Worcester sauce
1 pint of white vinegar
Whisk the above together, bring to a boil then whisk in 1/2 cup of vegetable oil.
Lightly flour the chicken (don't need seasoning) and cook till done. Soak in the sauce and back on the grill for a few minutes.
Then adjust the next time you make it - I like adding lime juice and a bunch of garlic.
I pat the wings (or any other chicken part) dry with paper towels and then put them in the fridge uncovered overnight to dry out the skin. Then lightly dust with baking powder before going on the grill - helps crisp up the skin.
Good luck with it.

Re: hot wings
If you want some killer wings, coat them with olive oil, paprika, chile powder salt, pepper and some cayenne pepper. Cook them on your grill until the skin is crisp then dip them in your favorite sauce. I am in the process of bottling my own sauce that I personally think is really great. It is called Bockbock sauce. If you would like to try some, let me know. Good luck.

Re: hot wings
A simple recipe I like is ...Season with your favorite rub or Weber's Kickin' Chicken, let set for a few hours and cook on the grill @ 325-350... pull off and sauce with the following:
1/2 bottle of Frank's Hot wing Sauce
1 stick of butter
1 1/2 tsp's garlic powder... heat and stir til butter is melted
1/2 bottle of Frank's Hot wing Sauce
1 stick of butter
1 1/2 tsp's garlic powder... heat and stir til butter is melted
