Sandhill Crane Recipe
Anyone have a good recipe or cooking tips for Sandhill Crane? Most everything on the interwebs suggest butterflying the breast, s&p, evoo and grilling to medium rare.

It's billed as the ribeye from the sky and is supposed to be pretty good, pardon the pun. We've got the TTHA Bucks & BBQ in San Antonio this weekend and one of our guys has some Sandhill crane. Quail always wins the wild game division and we want to do something besides quail or axis.
