St Louis Style Ribs - The Cut-Offs

I'm attempting my first foray in St Louis Style Ribs. I bought good looking meaty spare ribs, and then made the cuts necessary to create the St' Louis cut. I think they're going to turn out really good. However, I was in a quandary as to what I should do with the pieces I cut off? Some of the pieces looked "plenty too good" to just throw out. What I did was season those pieces and run them through the smoker for a couple of hours. After a night spent in the fridge I cut/trimmed them up today into small cube size pieces that I intend to use in a pot of BBQ beans for lunch tomorrow. I realize this idea is probably not original with me, but I'm curious what others do with the "leavings" from the St. Louis Style cut?.........They smoked up real good in my "smoking basket"......PS: I would love for someone to tell me where I might find some more of these baskets!....Thanks

If I don't scarf 'em straigt off the grate as beer snackage they get used for beans.
Never met a cow I didn't like with a little salt and pepper.

I use them in beans or chili. They make great football game munchies as well when smoked up.

Rib trimmings, I use mine for sausage meat. Never any waste . CF :D

Yep, I cook them alongside my ribs and they are the cooks tasters! I've also made pulled rib sammiches out of them. No way am I throwing them away. :thap:
