I am fairly new at smoking. I made some sausage today & would like some recipes for Fattys(NO Cheese please)

Just leave out the cheese.
You can get creative and stuff it anyway you like or just buy some breakfast sausage, unwrap, rub, and grill or smoke.

Some of the best ones I've done were rubbed but not stuffed, like EH alluded to. The better the quality of the sausage, the better the fatty. I like to use Jimmy Dean.

Make Two Fatties~
3 lbs. bacon quality thick sliced
2 lbs. regular Jimmy Dean breakfast sausage
2 Avocado slices
red ñ green bell sliced very thin
mushrooms very thin sliced
onion slices cut very thin
roasted garlic all over
2 jalapeño peppers mix with serrano’s as many as U like - can use roasted green chili peppers sliced
Some rib rub *
Favorite BBQ sauce *
2 gallon sizes zip loc bags
2 parchment papers or 2 pieces of wax paper
Do all preparation before starting the fatties together. Remove chili seeds from all peppers - dice or slice them - make UR favorite rub ñ BBQ sauce or make UR own. Slice up avocado with all other veggies that U want to use - set aside.
Make bacon weaves - each will have thirteen pieces of bacon per weave or twenty-six pieces total. Fry some up real nice ñ crispy. Place it on a paper towel drain - set aside.
Note~ *After rolling - use rub and seasoning on the outside – can use inside the bacon also .
Just get very creative or make it very simple. Make a shrimp wrapped in bacon n get really creative with the so many options. My mouth is watering.
