Postby TxPlates » Sat Nov 29, 2014 5:19 pm

Never made them on my own, picked up some from the store today. Wanna make them tomorrow, anyone got some great ways to fry them?

My recipe is dunk in buttermilk, drench in flour+pepper+kosher salt and fry. How'd they turn out? Love these things.
BE WELL, BUT NOT DONE
Hank: "Do you know how to jumpstart a man's heart with a downed power line?"
Bobby: "No."
Hank: "Well, there's really no wrong way to do it."

3 green tomatoes sliced ½” thick or larger
Kosher salt
1 egg extra large
6 Tbsps. buttermilk
1 c. cornmeal
1 c. all purpose flour
1 T. Cajun seasoning
4 Tbsps. Canola or extra virgin olive oil divided
10 to 12 large shrimp peeled deveined tails on
Garnish: 2 Tbsps. chives chopped or flat leaf parsley chopped

~ Spicy Remoulade Sauce
2 c. mayonnaise
2 Tbsps. ketchup
2 Tbsps. stone ground mustard
1 T. chives or parsley fresh flat leaf chopped
1½ tsps. cayenne pepper or red crushed pepper flakes use 1 T. really spicy
1 T. lemon juice fresh
2 tsps. prepared horseradish
2 garlic cloves
1 tsp. Worcestershire sauce
1 tsp. celery salt
1 tsp. paprika

or try these ones~ below

6 green tomatoes firm
Garlic ñ onion granular sprinkled
kosher salt n pepper
1 c. all purpose flour more or less
3/4 c. butter milk well shaken
1/2 c. yellow cornmeal more or less
1½ c. panko bread crumbs ~ I season again UR voice with little cayenne
pepper ñ Accent
Criso oil for frying

Season tomatoes with kosher ñ pepper - set aside. Place flour on a plate. Whisk together shaken buttermilk in a shallow bowl - another bowl add ñ mix well corn meal ñ panko bread crumbs with seasoning in another.

Working with 1 slice of tomato at time coat tomatoes 1st in flour - knocking off excess ñ in buttermilk – Panko mix with seasonings. Remove breaded slices to a baking sheet ñ repeat with remaining slices of green tomatoes.

Preheat oven 200 °F. line a 2nd baking sheet with paper towels. Lining baking sheet with a cooking rack is for excess grease can drip down. Heat 3/4“ Crisco oil in a skillet to 350 ° F.

Do not crowd in the skillet when cooking to a golden brown - about 2 minutes per side. Remove them with slotted spoon ñ place on prepared baking sheet on the rack in oven. Keep cooked tomatoes in the warm oven as you fry them up. Serve with ranch dressing or any dipping sauce.

[i]Try these as a bacon sandwich also OH MY or add some jalapeño’s or roasted gr. chiles into the batter mix. Yummy I have many different ways of making these ñ OH don’t forget to try double frying them. Sometimes after coating I place them in freezer about 30 minutes before deep frying in the hot oil ñ ALWAYS bring oil up to the degrees cooking with EACH time a new batch goes in.
