Question on Smoked (hot) chicken wings

Postby riseabove50 » Wed Feb 18, 2015 3:49 pm

ladies and gentlemen,

I've got a huge Costco sized bag of frozen chicken wings that I would like to smoke for March Madness and I am looking for suggestions/tips on how you masters prepare your wings.

what temp do you smoke at?
how long?
what rub(s) do you use/prefer? and would you mind sharing your recipe?
do you suggest brining? and if so, besides salt what else do you put in your brine? and how long do you brine for such a small piece?
do you suggest finishing over direct heat to crisp up the skin or will that even be necessary?

I am also looking for dry (no sauce) recipes as well as hot wing sauce recipes if you have them.

thanks very much guys!
LET'S GO DUKE!!

Cook at 325 I season mine with 1 part Table Salt & 1/2 part each of Cayenne & Chipotle, I make a Glaze/ Dippin sauce of honey and red pepper flakes & Pressed garlic that I simmer for 30 min thinned with a little Bourbon off the heat and allow to cool
Never met a cow I didn't like with a little salt and pepper.

This one came out fantastic! I sprayed with a light layer of canola oil and applied the below vigorously and smoked for about 3 hours around 250, then finished off in the broiler oven for about 5 minutes to crisp up the skin. they were awesome! no sauce needed, and only a little ranch for variety. but man my lips were burning after wing #3. I definitely recommend giving this one a try: Smoked Chicken Wings Rub Recipe Ingredients
• 5 pounds of chicken wings
• 3 tablespoons oil (olive, canola, or vegetable)
• 2 1/2 tablespoons black pepper
• 1 tablespoon onion powder
• 1 tablespoon garlic powder
• 1 tablespoon seasoning salt
• 2 tablespoons chili powder
• 2 tablespoons red pepper flakes
