Low Key Brisket

I am going to buy a new ECB and I wanted to break it in with a Brisket Cook.
I need some input on the kind/size of Brisket and the best way to cook it on a ECB.
Some of my questions are:
Water Pan or Not?
Flat or Point?
Briquettes or Lump or Wood?
Baste? - Inject? - any Oven time?

Any and All suggestions will be appreciated.

One more semi related question:
?what type of meat thermometer is best for lite ECB grilling and smoking?

Baste? - Inject? - any Oven time? Not really necessary to baste or inject if you wrap. Remember, three hours or so in the smoker is going to give you all of the smoke you want, so you can finish it out in the oven if you like.

Any and All suggestions will be appreciated.

Cook a packer lay a 'mater can on the grate and drape the brisket over it(fat cap down)
My water pan has 2-3" of Dollar General cat litter(1$ a bag) in it and foiled over
mix 3-5 man fist chunks of wood in the charcoal mostly lump light 15 briquettes and dump it on top
S&P smoke & time
I wrap mine in butcher paper dry( you can use a paper poke free from the grocery store)
I don't use a thermometer cook it until it probe like melted butter in the thickest part of the flat.
Never met a cow I didn't like with a little salt and pepper.
