Short Ribs....anyone

Hello i am John from the Netherlands....

I am a chef in real life and i love the Bbq in my private time, now i have a question for the real deal BBQ pit people......

Do anyone have a traditional recipe of Short Ribs, its not neccesary to write the whole story but something like this.


- dome temp......
- meat temp......
- total time......
- wrapped in paper on temp.....
- finish on temp.....
- use smokewood ......oak/hickory/apple

Or if you want to share youre story.....share it.

These are short rib steaks.....they look also amazing, but what i mean is i think in the USA they called 'flatrib' when its finished you have a chunk of meat with one bone.....

These are actually called short ribs, but when cut like this it's called Flanken short ribs.
I do know what you are referring to tho and those are great.
This style is big in Korean style ribs that I did here..

I believe he is referring to what is sold as short ribs the dino ribs cut into two or 3 inch lengths, I personally have not cooked any in years.
They do have a significant amount of fat, take a while to cook and are the price of steak or better in the stores we frequent, the wife is always looking for
the bargains and these normally don't not fall into that category..
but if she was to bring some home, they would be cooked at about 275 degrees with a salt and pepper mix with a very small amount of garlic added, until they were tender and ready to eat, I would expect to be in the area of five hours give or take some.....

Flat ribs do take time to render out the fat. Note, temps on this board are most likely to be Fahrenheit, so you will have to convert to Celsius. 8)
