I don't have one for cream corn, But I do for corn pudding that goes on the smoker and its da bomb.
The recipe is for 8-10 and there are different variety's on the net and on pinterest that you can look at.

I can post mine if interested.

Not sure where I got it but somewhere online I found Rudy's cream corn recipe. It was good stuff.

I have tried a copycat recipe and it wasn't the same. I would massacre baby seals for an authentic recipe of Rudy's cream corn :laughing7:
That is the only think on their menu I like.

Massacre baby seals,lmao, you guys can't be politically correct as some down here. You'd get crucified if you said something like that down here. P.c gone nuts. We have a seal colony in kaikoura and a couple of years ago some young thugs killed about 10 baby seals, the country went nuts. From memory the guys got jail time.

Rudy's Country Store and Bar-B-Q Creamed Corn

Rudy's Country Store and Bar-B-Q Creamed Corn is a side dish that is worthy of your next meal.
Ingredients

1 pint heavy cream
4 ounces cream cheese
16 ounces frozen corn kernels
2 to 3 teaspoons sugar
1 teaspoon salt
fresh cracked black pepper if desired

Instructions

In a medium pot over medium heat combine heavy cream and 4 ounces of cream cheese. Stir until well blended, and and the sauce is smooth and creamy. Add corn kernels, and stir them in. Heat until the corn is warmed through. Add salt and sugar. Serve with some fresh cracked black pepper if desired.

Allow 1 large or 1 1/2 medium ear of corn per person. Split each row of kernels on the ear down the centre with a SHARP knife. Scrape each row into a flat dish or plate with a dull table knife or spoon. With the hulls on the cob, you'll get approximately 1/2 to 3/4 cup of creamy corn with some milky liquid from a complete ear of corn.In a big flat pan, melt a spoonful of butter for each ear. This is almost the cream corn from my youth. Sub about 1/2 of the butter with bacon grease and add some cooked bacon bits along with seasoning and you'll have mom's recipe.

If I'm too lazy, or don't have the time for the home made creamed corn above I use canned or frozen corn along with the butter, bacon grease, and bacon bits, along with seasoning to taste.

I use about a 2 to 1 whole kernel to cream corn ratio. Drain the whole kernel and do not drain the cream style. Adjust the ratio to your preference and just keep adding cans or thawed bags until you get enough. You can also add some easy to melt cheese to create yet another side dish. If you add cheese move the corn to the microwave in a microwave safe dish and melt the cheese there to prevent burning.

Cream Corn Hj's

ROUX in the pot~
2 Tbsps. melted butter
2 Tbsps. flour

Add to above roux slowly ñ stir
8 ozs. whipping cream
8 ozs. whole milk
1 tsp. salt or to UR  taste
½ to 1 tsp. garlic granular to UR taste
2 to 3 tsps. sugar or to UR taste*
black pepper or 1 pinch cayenne pepper OR add some Youngs Hatched Green Chiles to set it over the top.

WHEN roux to consistency add
2) 20 oz. pkgs. frozen corn kernels or Better
   YET -* use fresh corn from the cob ñ won't
    a lot sugar or none at all. CORN naturally
    is sweet.

Make the roux first of flour ñ butter ñ slowly add all other ingredients "except" the corn unless it isnt cooked ñ tender first - bring mixture to boil ñ simmer till consistency is reached. STIR OFTEN
Add corn stir till heat thru

* FRESH corn -  I cook on the cob first because you get all the nutrients in the cob ñ sweetness from the cob ñ cool a little B4 cutting it from the cob. SO much better.

Note~
CAN put finished corn in a heat proof casserole dish - sprinkle with Romano cheese ñ place under a broiler till evenly brown
          OR
USE Panko bread crumbs with a little butter ñ top the creamed corn ñ place in boiler till evenly browned.

SOMETIMES I added some whipped creamed cheese ñ less milk.

Can double or triple recipe for large groups
