Too Many Lemons - need Recipe

Our Myer Lemon Tree produced abundantly this year and I have eaten and given away all that I can. There are still about a dozen very large lemons waiting to be harvested and I am wondering if there is something I could do other than turning them into juice or lemon mush?

Has anyone preserved lemons before or maybe made Jelly, Salsa or ?whatever? to keep for future use? Here are a couple of pics and the one of me holding the lemon demonstrates just how large they are - - - I have big hands.

Any and all suggestions would be appreciated - - - and BTW, these are NOT Sour like the small yeller ones but semi-sweet like a tart orange. :dont: I have eaten many by just peeling and adding sugar or salt and they are delicious.

I got the same problem. This is the 3rd time my wife already picked this basket full and I bet there are at least 3 or 4 more basketfuls out there.

I squeezed and froze mine, if I have a gin at night I just drop a cube in. The preserving thing is what I intend to do when my fruit is ripe, I got lots fruit but being a different season it won't be ready for months yet. My daughter grabs lemons when they are ready and makes a lemon drizzle cake, It's beautiful . I recently bought a jar of preserved lemons for a Moroccan dish I'm going to make. Will keep you posted.

Never heard of it, uncle google gave me what I need to know, I'm going to try it next year,lol. Anything with alcohol is good.

Big Italian drink, especially after a good dinner. I drink it after it's been in the freezer for a few days.

thanks, Gents, all sounds delish but I'm kinda wanting to do something so that I can enjoy the plump tasty meat that these have over the next several months -- - - - - 'preciate the ideas :tup: :salut:

I put it in freezer to keep it cold. It won't freeze due to the alcohol.
U can use either Vodka or grain alcohol.

Oup I reckon you should preserve them, I bought these a week or so ago for Moroccan lamb dish. When mine ripen I'm making these.

thanks, Russ, I'm starting to lean towards Jelly or Marmalade BUT I'm still hoping I can find something Tex-Mex to preserve them for - - - they're still on the tree so I've got a little time left
