Looking for the ultimate burger recipe

Hey all, I am nuts about hamburgers. To me they are the ultimate meal. So I would like to develop "The ultimate beef burger patty' recipe. I would love from you what recipe makes the ultimate burger patty. Many thanks in advance.

Wow, that's almost like asking the best way to BBQ Pork Reebz :laughing7: :D :lol: However, you asked so I'll offer my suggestion. To me a Burger Pattie should be made from top quality Ground Beef with just enuff fat to make it hold into pattie form and then seasoned to taste with salt, pepper and ?garlic? - - - then grilled over charcoal or wood as long as it creates a smoky flavor (hickory, apple, oak, mesquite???)- - - - everything else is preferred "garnish" including the buns and toppings. Good Luck and be sure and tell us what you come up with, OK ? :tup:

FWIW, my preferred toppings are pepper jack cheese, roasted jalapenos, roasted own-yawns, honey mustard, lettuce, tomato on a grill-toasted Wheat Bun. :chef:

W. V. s post above reminded me that Bacon goes good on everything (even ice cream) but sometimes I prefer that Cow to be the dominate flavor. :cow:

Don't let OUP kid you. I hear he uses road kill for his burger meat. :laughing7:

Plain burger meat needs help. First off you need 20% fat in the burger if you want juicy burgers. Secondly, add 3 Tbs. of ice water to a pound of meat ((unless you grind your own fresh chuck). I then give my burger meat a generous dose of Peppered Cow (Simply Marvelous) and mix well.

Everyone has their degree of doneness. I like medium for burgers.

Everyone has their favorites toppings. I like lettuce, tomato, caramelized onions, bacon, sharp cheddar cheese, and yellow mustard. Sometimes I change to Swiss cheese and add grilled mushrooms.

Guess what I'm cooking on the 4th?

OK since you asked nicely I'll reveal my burger method, this is not a recipe but a process. You will think I am nuts but that's OK.

Get 80/20 or 85/15 ground chuck add nothing.
Fluff the GB so it is loose you don't want to pack it.
Form patties 3/4 " thick even a little more if you want but too thick creates more of a handling problem until the burgers get done.
Now lay out wax paper to place the patties on and salt the wax paper the amount you'd salt a patty. Place patties on the wax paper then salt the tops an equal amount.
Start your fire or heating device you have a little time here.
After a bit you will see the salt drawing moisture out of the patties, pick up each patty and softly rub the surface while reciting "Nice patty, good patty you are going to make best burger in the world." OK the magic verbage is really not magic but the method is however the words are important for the guests to form an opinion of the chef. You will actually be smearing the liquid evenly over the surface of the patty top and bottom....handle carefully.
When the grill or whatever is hot carefully place each patty on to cook they are a bit fragile until cooked so exercise care. Turn only once and never, never press on the patty and do not overcook.

Enjoy the best juiciest most flavorful burgers on the planet garnished with your favorite toppings.

You don't know me but those that do will know there is scientific fact tied to this process if you see me ask and I will explain, meanwhile enjoy.

Grind yer own.
Use bacon in the grind for fat content.
Onions in the grind are also yummy.
Dimple patties so they dont buckle.

8oz of 80/20 ground chuck heavily salted with gourmet french beach salt, cooked four inches from a very hot bed of coals for exactly 3 minutes per side.
Taste the meat.

I also am a huge fan of burgers. There is a meat market in Ft. Worth that I frequent where I have them grind me a special mix of 75% ground beef and 25% bacon. I think the key to great burgers is to not "work" the meat too much. Don't use a burger press or anything like that, let the meat be lightly formed by hand right before placing on the grill. I like to season with something as simple as Montreal steak seasoning, or just SP, and please, whatever you do, just flip once and do NOT press down in the patty and smash out all the juices. Resting is key as well. And if you want a cheeseburger, 2 slices of good quality cheese.

SMASHBURGER on a hot cast iron flat top.
Squirt some water around the perimeter of the burger, cover with a lid.
