Dried beef ??

Anyone here ever made dried beef ?
I've been hankering for some dried beef. Ain't had it what seems like forever.
My grandparents always brought back some when they returned home from North Dakota after wheat harvest.
I can remember going to their house and grandma would serve one paper thin slice of it on a potatoe bun. It was to die for.

I found a good step by step tutorial on another smoked meats site. Thinking I'd like to try my hand at making some.
I'm wondering if anyone here makes their own.

My Grandparents also turned me onto Dried Beef, Wild Bill, probably because my Parents could not afford it, especially so much for that "itty bitty jar' that opened with a church key. I guess they knew that it would NOT last long enuff to spoil, eh ? :laughing7: :D :lol: Also being a Salt Freak as I have always been it was right down my alley or should I say throat.

Heading to Costco tomorrow morn to pickup a brisket and a pork butt for a Halloween party next weekend.
The recipe for dried beef uses Beef Eye of Round. Hopefully Costco has it. Would like to grab 4 or 5 roasts. Also need to get a box of Tender Quick.
Looks like I'll have to visit Amazon and look for a meat slicer. The wife won't be happy bout that but I'll just tell her to figure it as a early Christmas gift. :laughing7:

I'm also waiting for the final result, and also learning how you are doing this, my wife just bought me a dehydrater for doing all our herbs. Would you use it on meat??????? I have no idea how you would do this or how and what to serve with it.

Here's the victims. :lol: Bout 13 lbs of eye of round
Fairly even weight between the 4 of them. Going trim off what fat they got on the outside, if any, and start the 12 day curing process tomorrow night.

Dried beef to me means jerky.
