Macaroni Salad or Equivalent

Postby OldUsedParts » Sun Jan 21, 2018 8:47 am

Does anyone have a Macaroni Salad Recipe that goes well with BBQ :?: I have been asked to do the Rehearsal Dinner for my Son's upcoming wedding and I was wanting to possibly add another side besides the standard Coleslaw, Tater Salad and Beans. :dont: :salut:

My wife makes this Rachel Ray Mac and Jack salad. It’s not a traditional Macaroni salad as it has a little pepper jack kick to it.

It’s good stuff. I like the sweet (crap as she calls it) from the grocery store too but that Mac n jack is totally different. Nice change of pace.

My mom's pasta salad is the best. Boil one box of tri-colored rotini pasta. Drain and cool. Take provolone cheese and cut into slices or strips about one inch long by 1/2 in wide. Slice up a bunch of pepperoni slices into smaller slices. You can also add ham chunks. Slice up raw onion and tri-colored bell peppers. Also really good with salad olives. Combine all ingredients in a large bowl and toss with Italian dressing refrigerate for a few hours before serving. I promise if you try it you will like it.
