looking for some spice help

I am looking for a website that tells you which spices go good with what meats etc. More as a guide then as a set and ture guide. I am looking at triing different spices. I have a herb wheel that list some spices, but mostly the ones the company sells.

also looking for a site that list peper spice hotness from cool to 4 alarm etc.

Also one last question. I keep reading fresh vs jar. I assume if you go fresh you get a better taste? how long can you keep fresh herbs etc?
