Re: Need recipe for Smoked Jalapeno Pistachios
Although-I don't smoke did find this that might help you to get started..
Smoked Pistachio’s
chef chris nyc stated~
Soaked them in water with aromatics then gently smoked them in a Bradley smoker, hot, for 1 ½ hours. The result was a very smokey, not so acrid, hickory pistachio. I find that nuts take on a very unpleasant taste if you smoke them for too long. It's a fine balance, a little over or under is dramatic.
Another person stated~
The next spark came from the pistachio shells. What if we used the shells to generate the smoke for the smoked pistachios? That would be a good use of a normally discarded product and the idea made sense. Rogue River Creamery smokes their blue cheese over the shells of hazelnuts, a pretty smart idea. Since I wanted to generate smoke with the aroma of pistachios I opted to char the nuts in the shells. The smoke which was generated was delicate and rich with the aroma of roasted pistachios. The charred whole pistachios produced a dark roasted pistachio flavor which, while not aesthetically beautiful, makes up for it tenfold in taste. We will pursue several infusions with this element. Also, we will begin pulverizing the nuts before smoke generation to increase the surface area of burnable material as well as the speed at which smoke may be produced.
Hj remark~Of course the jalapeno would have to be smoked with the pistachio's- I would guess-in order to have the jalapeno taste or lay the pistachio's on top of cut open jalapeno's on a flat device so they could be turned n mixed together than run the pistachio's threw something to seperate nuts from jalapeno's or set the nuts up higher than the jalapeno's but not sure how you would get the fire n direct taste from the jalapeno.
What do I know about smok'n ....I don't but thinking of infusion n flavor even just in regular cooking. Good luck Let's know how they turn out

I thought all the Pistachios had been recalled due to nasty beasties in them.
