Looking for a Beef Jerkey Recipe

Postby super8mm » Wed Apr 08, 2009 10:07 pm

I am wanting to make some Beef jerky this weekend, does anyone have a recipe? i do not care for Teriyaki style, I was thinking of doing a cool smoke on it for a while then move it to a dehydrator?

Say ye what thoughts y'all have???

I've never made jerky myself, but here is one method that I've been wanting to try.

Can you keep your cooker at a constant 150°, even for a few hours? I've tried on Einstein and decided it was too much work  I bring it up only for the benefit of other readers who don't realize that jerky making is a drying a process as opposed to a cooking process.

If you decide to forego the smoker, you can always add liquid smoke to the marinade for that smokey flavor. Done that exact thing and had folks rave about the jerky. Go figure.

I use to use the dehydrator easier for me.

the hardest thing was cutting the meat until realize you slice meat when part frozen. What a breeze.

Huge pan place sliced meat in some liquid Mesquite soak couple hours
liquid smoke should be all soaked into meat by than after tossing slices.

Added garlic granular- little salt- red crushed peppers

or would use after the liquid smoke
add chili powder - cumin- salt- lime..
Didn't like the soy sauce.
Experiment..

just plain with garlic salt n black pepper. was always good Had a 7 layer dehydrator - not even sure where it is now.. Happy Easter to all

Dave I think I can keep the temp down to around 150°, it is a offset with a vertical part. I think I will do some brisket tomorrow or sat and watch ther verticle part as I think last time the main compartment was 225° and the verticle was about 170°?

thanks Hj, I figured at least I could smoke it long enough them move it to a dehydrator if I need to.

I did get a slicer to help me cutting it up, porblem is wife has not seen it yet

I dont think I would like the soy sauce either, salt, pepper are always good with a bit of something hot :D

Then she would want to know what I had been up to for sure, might be easier to just get up early and do it before she gets up
