I'm looking for two things. Firstly, I had some homemade sauce many years ago in Ocean Springs, Mississippi from an old retired sailor from Marshall. He shared it generously, but wouldn't part with the recipe. I've collected BBQ recipes for years, but I haven't found what I really want yet. If anyone could help, I'd appreciate it. (BTW, about 99% of well-meaning donors send me sauces full of sugar, honey, molasses, or ketchup. I'm looking for a Texas BBQ marinade with no sugar beyond maybe some apple juice or a squeeze of orange.) I know, it's a tall order. Anyone with a great recipe just doesn't want to talk about it.
Secondly, I live in Louisiana and would love to have a source for Texas BBQ as close to the border as possible. I'm in the central area, but will go north or south. Thanks.

I have not tried this recipe yet, but I plan to. It may be similar to what you are looking for
Texas Best BBQ sauce:
3 oz. tomato paste
8 oz. water
1 Tbl prepared mustard
3/4 Tsp dried thyme
1 clove garlic, smashed
1/2 sweet onion, grated
3 - 4 chile d'arbol pods,
de-seeded and ground
1/4 Tsp ground cumin
2 Tbl white vinegar
1/4 Tsp liquid smoke
salt to taste
pepper to taste
Combine the above ingredients into
a small, non-reactive sauce pan.
Bring the contents of the pan to
a boil, cut the flame to the
lowest setting, and simmer until
the sauce is thick.
