Refrigerator Fruitcake

Postby Allie » Sat Nov 28, 2009 11:10 am

My grandmother always made a fruitcake using graham crackers, condensed milk, coconut, and cherries. This stuff was very rich and you just made it into a log, rolled in the coconut, and refrigerated. Then you could slice for eating. Does anyone have a recipe for this? TIA!

This is not the same as yours, but it is good. Recipe was given to my wife in 1961. The recipe is much older than that. Notice that it is called "icebox" fruitcake.

Mrs. Saylor's Ice Box Fruit Cake
2 boxes vanilla wafers
1 pound dates
1 pound candied cherries
1/2 pound candied pineapple
1 pound walnuts
1 pound pecans
1 small can carnation milk
2 - 9oz. bags marshmellows melted in the can of milk. Make hot.
All other ingredients:
Mix with hands and pack in glass dish or in a tube cake pan.

Cover with wrap, keep in refrigerator.

Makes one big cake or two nice ones in oblong pyrex or 4 inch deep pans.
