spicy shrimp???

whats some simple techniques to make spicy shrimp?? boil, grill,....? dont have to many choices whe it comes to ingridients.

You can boil or grill and get good spicy shrimp. Just be careful when boiling because you can easily make them too spicy if you're heavy handed with the seasoning.

I love grilled shrimp and there are a multitude of ways to season them. You can go as simple as sprinkling a little creole seasoning on them, and add a little cayenne pepper if you want more spice. Buffalo shrimp are great too if you just want to use a mixture of melted butter & your favorite bottled hot pepper sauce. When I do that, I like to add some fresh lemon juice & minced garlic to that sauce mixture as well. The only bad thing about grilled shrimp, IMO, is they are quite a bit of work for something that disappears off the plate so quickly :lol:

Texas Hot Pepper Shrimp:

1/2 Red Pepper Flakes
1 TSP Cayenne
1 TSP Black Pepper
1 TBSP Thyme
1 TBSP Rosemary
2 TBSP Oregano
1/2 Cup butter
4 Cloves Garlic, minced
1 TSP Worster
2 LB Shrimp in shells
1/2 Cup stock or water or beer

Mix all the dry seasoning and set aside.
In large cast iron skillet on high heat, melt butter + add garlic, worster and dry seasoning.
Add shrimp and continue cooking on high heat for about 2 minutes.
Add liquid and finish off until shrimp turn bright pink, about 3 - 4 more minutes.

Top with fresh avocado slices and pico salsa.

Cajun Hot Shrimp
1 lb. shrimp
½ tsp. Cajun seasoning
1 T. vegetable oil
1 small handful chopped celery
1 T. fresh chopped ginger
2 cloves of chopped garlic

Sauté garlic- ginger - celery with vegetable oil on medium-high heat (approx 2 minutes
Peel tails - shells from shrimp. Sauté shrimp in oil until they pinken (approx 2 minutes per side. Sprinkle Cajun seasoning other shrimp - cook in flavor (approx 1 minutes
Serve it up on a plate solo or with some with Spanish Rice

12 large shrimp
6 slices bacon cut in half
1 jalapeno fresh
1 slice monterey jack cheese thick
1 T. paprika
1 T. cayenne pepper
1/2 tsp. fresh ground black pepper
1/2 c. butter
1/4 c. white wine
wooden skewers soaked in water

Clean - devein shrimp- leaving last section - tails intact. With a paring knife- carefully slice each shrimp from tail to tip.

Wash - seed jalapeno- cut into a pieces about 1/2-inch X 1/2 inch squares.

Cut slices of cheese into 12 small pieces. Stuff 1 small piece of cheesen 1 small piece jalapeno into each shrimp.

Wrap half slice of bacon around each shrimp. Place shrimp on wet skewer. Repeat process until all shrimp have been placed on skewers. Place in refrigerator few minutes while you prepare rest of the recipe.

Mix paparika- cayenne pepper nblack pepper together.

In small skillet, heat butter n white wine until butter is completely melted.

Prepare grill. ~note~I use my indoor grill- these can be made on an outdoor grill too but use a low flame!

Remove shrimp from fridge - brush completely with melted butter. Sprinkle with seasonings.

Grill on each side until shrimp are done.

BBQ Shrimp
2 lbs. shrimp - washed-devein
1/2 LB. butter (NOT margarine
3 T. McCormicks Seafood Seasoning- or shrimp seasoning
1/4 c. olive oil
1 tsp. cilantro
3/4 T. basil
1/8 tsp. Mexican oregano
3/4 tsp. garlic powder
3/4 tsp. salt
1/8 tsp. cayenne pepper or 1/8 tsp. chipotle powder
1 T. lemon juice

Mix all ingredients in baking dish - broil - approximately 20 minutes or until brown on top. (want shrimp to be in single layer in pan- Serve this with French Bread and potato salad

Grilled Spicy Shrimp
1/4 c. x- virgin olive oil

1 1/2 lemons juiced or use lime
2 T. brown mustard *optional
1/2 c. basil fresh chop fine
3 garlic cloves minced
salt to taste
little red crushed pepper or cayenne to taste

3 lbs. shrimp peeled deveined
skewers

Shallow- bowl or zip lock bag mix together olive oil. Stir in lemon or lime juice with other ingredients.

Add shrimp- toss to coat. Cover- refrigerate 1 hour.

Preheat grill to high heat.

Remove shrimp from marinade- place on skewers. Discard marinade.

Lightly oil grill grate- arrange skewers on preheated grill. Cook 3 minutes or more- turning once- or until shrimp turns pink.

Notes~ * replace mustard for creole seasoning or don't use but add some Romano grated cheese with fresh chives.

Mojo de Ajo
Put onion-peeled garlic-pepper - juice from limes into a blender with 1 tablespoon salt- blend 'till every thing is liquified - should look like cream soup (taste salt to your liking.
Using a large skillet -place about a c. margarine to melt-while this is going on marinate split shrimp in mojo de ajo from blender (you can use a shallow container to do this.
DO NOT MARINATE FOR MORE THAN 2 MINUTES then throw them in pan with margarine (low fire works better-cook till shrimp turns redish pink about 3 minutes.

Shrimp Creme Brulee
This is how I make

1 T. butter melted or little more
Creme Brulee Lucerene coffeemate
paprika
Wonda flour
onion powder
Accent
cayenne pepper
dash fennel powder
salt to taste

Shrimp cooked or uncooked Clean rinse devein n remove tails dry

Optional ~ dash chiptole powder

Add all top section in skillet with as much Brulee to cover amount shrimp making.
Let sauce reduce n get thick as you want..Add cooked or uncooked shrimp.
Heat through or just till pink..This is delicious over rice or with just bread.

Shrimp With Creamy Orange Sauce
4 Servings

1 lb uncooked medium/large shrimp.. shelled.. deveined
¼ cup green onions sliced
1/2 tsp. grated orange peel
1/3 cup dry white wine
¼ cup orange juice
¼ cup whipping cream
2 tsp. cornstarch

Use medium skillet, combine shrimp, onions, orange peel, wine and orange
juice. Bring to a boil; stir gently. Reduce heat to low; cover - simmer
2-3 minutes or until shrimp turn pink. DO NOT OVERCOOK!

Small bowl, combine whipping cream and cornstarch; blend until smooth.
Gradually stir into hot mixture in skillet. Cook over low heat until
thickened, stirring constantly.

Microwave
In 2-quart microwave-safe casserole, combine shrimp, onions, orange peel,
wine and orange juice; cover tightly. Microwave on MEDIUM for 7-10 minutes
or until shrimp turn pink, stirring once halfway through cooking. DO NOT
OVERCOOK!

Small bowl, combine whipping cream and 1 tablespoon cornstarch; blend
until smooth. Gradually stir into hot mixture in casserole. Microwave on
HIGH 1 to 2-1/2 minutes or until mixture thickens; stir gently.

Tomatillo Sauce with Shrimp Spicy
4 servings
4 tomatillos husked large
2 green onion minced
1 garlic clove minced
1 T. olive oil
1/4 c. lime juice fresh
black pepper
2 T. cilantro chopped fresh
1 lb. shrimp-shelled-tails left on
4 jalapenos seeded cut into thin strips

Place tomatillos on a hot skillet- roast couple of
minutes or until blackened on all sides. Saute onion -garlic
in oil until soft.
Place tomatillos- onion mixture lime juice- black pepper in
blender - puree until smooth. Stir in cilantro. Marinate shrimp in this mixture 1 hour. Remove-thread on skewers along with -chile strips. Grill until just pink (a few minutes on each side- serve with sauce on the side.

Chile Lime Shrimp
2 T. tomato paste
2 T. Asian chili garlic paste
Pam cooking spray
1 lb. shrimp - 16 to 20 count peeled deveined
1 lime cut into wedges

Combine tomato paste ñ chili paste in small bowl.
Spray wok or large skillet with cooking spray; heat over high heat 1 minute. Add shrimp; cook 5 minutes, or until shrimp turn pink, stirring frequently.
Add tomato paste mixture; toss to evenly coat shrimp. Divide shrimp evenly among 4 serving plates. Squeeze 1 lime wedge over shrimp on each plate before serving. Serve with additional lime wedges 4 servings 4 or 5 per person

XTC Shrimp Hot or Cold Hj's

-is how I make this love it chilled cold
Using extra large shrimp
1-2 lbs. shrimp rinsed well de-vein leave tail on if already cooked drain
Red onion diced fine
Olive oil just enough to barely coat using both
1-2 garlic cloves diced fine
1 tsp. Italian seasoning .or to your taste
Black olives rinsed ñ chopped finely
Roma tomato diced small
Dash of sea salt or salt
Red pepper crushed
Lemon fresh squeeze a little maybe ½ lemon or you taste or lime
Lots of Grated Romano cheese

Zip lock bag
Place cooked shrimp with everything listed into zip lock bag – turn to mix often refrigerate till well chilled-longer chilled better even a day is better if you can keep away from them

~Note~ Or just pour Bernstein’s cheese ñ garlic Dressing to replace olive oil
Put on crackers, eat alone, or over salad. Great for lunch on bed of lettuce or with a glass of wine when friends drop in. These never last

Fry these Jumbo's they are CRISPY
1- 2 lbs. jumbo colossal 6-8 per lb.
2 eggs
1 tsp. garlic granular
1 tsp. salt
½ tsp. cayenne Pepper

Vegetable oil for frying select a flavorless oil with a high smoke point- such as Safflower oil.

Clean de-vein shrimp. Peel -remove the tail- de-vein. Rinse in cold water – drain -set aside on a plate
Beat eggs into medium bowl add seasonings mix well. Place flour in pan – Place shrimp into egg mixture than-dredge shrimp in flour coating well - into deep fryer – oil heated to 365° F- 375° F. Takes a while to cook the jumbo. Don’t crowd the shrimp – turn shrimp often in oil with tongs- cook till darker brown.
If you cook properly keeping oil hot before submerging next batch-they will be real crip on the outside ñ extremely moist on the inside - get the Cocktail sauce out or tarter sauce.

Shrimp with Seasoningsor Grilling

lemon n butter with basil
Seasonings can range from cayenne, pepper-chipotle pepper-paprika- basil-garlic- wrapping shrimp in bacon n insides of shrimp stuffed with jalapeno n cheese to marinades before BBQing with melted butter- onion-cajun seasoning to Greek seasonigs -wine marinades ... onions -with different oils to marinade like peanut- garlic oils -Zesty Italian dressings and such.
simple recipes-but again -your taste buds and cravings..

If grilling with wood soak wood 30 minutes in hickory or mesquite liquid smoke n water or just plain water,
grilling with skewers use one of those screens you place shrimp inside, close metal and can turn on the grill easily.. Shrimp cooks or grills fairly fast..

Get creative.
don't forget the BBQ sauces can be use also..

Shrimp Mushrooms n Artichoke hearts
Serves 4

16 mushrooms medium
2 tsp. garlic chopped
1/2 c. butter melted
16 shrimp large cleaned
1/2 tsp. pepper
3 garlic cloves fresh crushed peeled minced
1/4 c. lemon juice fresh
1 jar marinated artichoke hearts
4 lemon slices
2 T. parsley or chives

Saute mushrooms n garlic in butter until almost tender. Add shrimp - saute until shrimp is cooked- about 3 minutes (do not overcook!. Add remaining ingredients EXCEPT lemon and parsley - heat through.

Serve over pasta or rice.

Garnish with lemon slices n parsley or chives.
After BBQ on grill can always sprinkle with Romano cheese with any garlic-basil- sage whatevers

Pesto with Garlic Shrimp
Serves 1

2 ozs. garlic butter
6 shrimp
2 ounces diced roasted red bell peppers
1 ozs, pine nuts
1 ozs. white wine
3 ozs. pesto (buy or make
2 ozs.heavy cream
2 ozs. Romano cheese
6 ozs. angelhair pasta

Saute shrimp, bell peppers, pine nuts, and white wine until cooked, approximately 2 to 3 minutes. Add pesto, heavy cream and Parmesan cheese and cook 1 minute. Place cooked pasta in center of plate. Stand 6 shrimp around the pasta - top with garlic/pesto sauce. Garnish pasta with parsley.

Spicy Shrimp to Die For Awesome

Sauce
1/2 c. mayonnaise
1/2 c. Thai Sweet Chili Sauce
1/2 to 1 T. Sriracha Hot Chili Sauce
Mix well.

Shrimp
1 lb. Shrimp shelled n de veined shrimp peeled
egg whites
some cornstarch to coat shrimp
Dip shrimp in egg white n dredge in dry cornstarch to coat.
oil for frying (peanut oil

Deep fry shrimp until lightly brown. (about 2-2 ½ minutes
Drain on paper towels put in bowl - coat with sauce.
Top with chopped scallions. Serve

Chipotle Pepper Shrimp

2 lbs shrimp- with or without shell on - raw
1/2 can chipotle peppers- use less than half a can if u don't want it spicy n use more if u do want it spicy
Butter
1/2 bottle ketchup small
1 tsp. garlic minced
some slices of onions

Melt butter n add garlic in skillet- add washed n de veined shrimp. Throw in sliced onions- cook till little tender-add
shrimp until pink n throw in sauce

Prepare ahead-In a blender mix -chipotle pepper with ketchup-add half bottle ketchup n less than half of can of chipotle- Blend well than add it to shrimp.

Shrimp Dip Awesome

1 c. Jalapeno Jack cheese
1/2 c. sharp cheddar
1 c. cream
1 tsp. curry
2 tsp. Cajun spices
1 tsp. seasoned salt

Cook all until melted.
By this time shrimp will be finished cooking -chop shrimp up -place it into your cheese sauce.

Take loaf French bread- cut it into small 1 inch squares- pour your dip into a bowl n have at it.

Shrimp Nachos

12 oz. shrimp cooked peeled de veined (or buy bags of frozen shrimp
1 1/2 c. Cheddar cheese shredded
1/2 c. green chiles chopped drained
1/3 c. green onions sliced
1/4 c. black olives sliced, drained
1/2 c. mayo
6 dozen round tortilla chips

Chop shrimp coarsely. Combine shrimp- cheese- chiles- green onions n mayo. Arrange chips on a baking sheet. Spoon about 1 1/2 tsp. of shrimp mixture on each chip. Bake 350 F. about 5 minutes or until cheese melts.

Cajun Shrimp

Marinate shrimp in lime juice and spicy Cajun spices
for 5 - 10 minutes
Place straight onto the hot BBQ grill.

Cayenne Spiced Shrimp
1-1/4 lbs prawns or jumbo shrimp
1 tsp. ground cinnamon
1 tsp. freshly cracked black pepper
1 tsp. sea salt
1 tsp. cayenne pepper
2 tsp's. dark brown sugar
1 tsp dry mustard.

Insert a wooden skewer through the shrimps
Combine cinnamon, black pepper, salt, cayenne, brown sugar and mustard, mix well.
Coat shrimp with mixture.
Place shrimp n any remaining spice mix in a zip lock bag. Refrigerate at least 15
minutes and up to 24 hours.
Preheat broiler or grill. If broiling, line baking sheet with foil n arrange shrimp on
baking sheet.
Broil shrimp in middle of oven until cooked, about 10 minutes. If grilling, cook
shrimp over hot coals until opaque, about 2-3 minutes on each side. Keep skewers out and away from coals to prevent them from burning

This should hold you for a while Gator.
