The Mrs went to the store n picked up a 5lbs of whole boston butt. Anyone have a good recipe or tips for how to cook this? I've never made one. We dont have a smoker either and she got rid of our grill while I was gone so I can pick out a new one. Just dont have it yet. All we have is like a weber 12inch grill so I guess I'll have to make it in the oven. She did tell me to come here for the recipe though :D lol She has been converted. :angel1:

Welcome back to the world!!
If it were me I would make "Carnitas."
The easiest way is to slice the Butt with the grain into 1" thick pieces Lay the slices in an electric skillet with enough melted Lard to completely cover it. Set the temp at 200-225º on the control and poach it in the lard 3-4 hrs. Remove it from the lard it will be like P/P. Pull it in a 13X9" pan and toss it with your favorite Rub Then Place the pan under the Broiler in your oven to caramelize some of the pork. Serve in flour tortillas with a little BBQ sauce or some Avocado and sliced red onion and a squeeze of lime. :3some: There you went and done it I got my self hungry. :lol:

Carnitas is sure a good route to go, but if you want to do pulled pork, you can use the oven. It just won't be BBQ and won't have that real smoke flavor. Get you some cheap yellow mustard and mix with a touch of liquid smoke, maybe a tablespoon of it (I know, but he doesn't have a smoker). rub that mixture all over the but till ya got a thin layer. Take a good rub (like Hoochie Mama or Hog Waller) and apply liberally to the butt. Let that sit while you preheat your oven to 250°. Once the oven is to temp, the rub on the butt should be moist and paste like. Add more rub and put uncovered into the oven (in a pan) and let it cook until the internal temp gets to about 165° then wrap the but and cover the pan. You can increase the oven temp to 275° to help speed it up a bit at this point. Cook until the about 200° internal or until the bone pulls out easily. Wrap it up tight, let it rest for at least an hour, pull and serve.

Another vote for carnitas!!!

I will agree on James cooking method. I will agree on BluDawgs eating method except I prefer corn tortillas with carnitas.

When I eat carnitas, I use corn tortillas, meat (PP or even roast), diced onion, chopped cilantro and some salsa. Maybe squirt a little lime juice in it.

Yum!!! I love carnitas!!!

I made these last December... I think these are roast carnitas though.

Carnitas around here always, always have raisins in them. I use to pick them out but they've grown on me so I leave 'em in now.

Must be those northern carnitas... Ain't never had any with raisins, even in Mexico... But if'n ya done took a like'n to 'em, go fer it.

That's like my favorite place in west Texas puts pecans and raisins on their Chile Rellenos......man it sho is good.

Well ya missed dinner. I understand with the long drive and all though. There's left overs in the fridge for you though. Turned out pretty good. I seasoned it up with some black pepper, salt, garlic powder, Montreal steak seasoning and season all. (It's all i have at the moment.) I didn't add carrots or mushrooms either. It turned out nice and tender and quite tasty though.

All sounds delicious

Don't forget boston butt good for tamales- burrito's -all taco's -enchilada's n quesadillas once cooked..

Meat freezes well once cooked also..
A mistake is sometimes a great creation
