I have 3# bird thawed in the fridge and we're getting another 6" of partly cloudy right now. Just don't have the gumption to fire up any of the smokers. Thinking might get to use that crockpot I bought last year and have used only once

I don't see why the C.P. wouldn't do the trick. I never had it w/o schrooms. Try substituting some chunked up Apple or Pears.
Never met a cow I didn't like with a little salt and pepper.
