Red Enchilada Sauce featuring SB Chili Seasoning

This is good stuff,

You'll need:
1.5 qt saucepan
Whisk
2 TBSP Flour,
2 TBSP Shorting (I use Crisco but lard would work too),
1/4 cup of SuckleBusters Authentic Texas Chili Seasoning
2 to 2 1/4 cups of broth (beef is better but I suppose you could go the clucker or veggie route)
1 clove of garlic finely minced (or 2 cloves pressed)
1/4 to 1/2 tsp of Oregano
1/4 to 1/2 tsp of Cumin
1/4 to 1/2 tsp granulated onion
1/2 tsp of Kosher or Sea Salt (omit if using bullion cubes for the broth)

Start by making melting the shorting over low heat in the sauce pan. Slowly add the flour stirring all the while. Keep stirring (should be bubbly) until the Rue is somewhat amber is color. Remove from heat and whisk in the broth until well blended. Whisk in remaining ingredients a little a time. Put back on heat and gradually bring back to a near boil -stirring constantly. Lower heat and simmer for 5 - 10 minutes. Sauce has a great back bite.

Use this sauce in your favorite Enchilada recipe and leave the tinnie tasting canned stuff at the store.
