Competition Chili Kit

I ordered some competition chili kits, and made up the first one last night. I thought the chili was delicious, but I did have a question. I've never had competition chili, and I was surprised by how mild this chili was. Is that really how the competition chefs do it, or would it normally be a spicier version of this? Either way, this was very good, and looked fantastic.

Thanks very much and yes the Competition Chili is a much milder recipe than our home style recipe. 8)

In competitions you want a turn in that is pleasing to a wide variety of paletes, just a good all round flavor profile, you can adjust on site depending who you see walking in to the judging area, at home too.
