Had plenty of 1 and 2 so I blended and rubbed down an 11 pound butt. Rolling at 240 grate temp. Should be just right around lunch mañana.

The bone slood out around 9:00. Brought some to a homebound friend and he said he isn't saving any for his bride - lol. The #1 and #2 blend made for some eggcelent and tasty bark.

Both Jenni and I were in synch on the 1/2/3 rub test - Uncooked (just a pinch taste test) we were 3-1-2
and cooked on some real nice pork steaks we found the order of preference to be 3-2-1
