I think glass has a longer shelf life and don't have to woory bout chemicals from plastic leachin into sauce. On the other hand plastic is a better shipper but can create label adhesion problems if the sauce is hot packed. As bottle cools and shrinks the label will get creases. Toss up. For me if I had to pick one, I would use plastic. Let product cool and then label. Will probably increase costs over bottle but will cut inventory shrinkage by less breakage.
