I have cooked in 100's casi event. Won a state championship on year. Gave it up cuz no money like q'n.
Use one of the recipes and tweek it. Look close at each recipe they do not tell you which special ingedient they really use. Most use a tbl spoon sugar or coco and brown sugar to cut the acid in chili
You cant use chunks of tomatoes,onions beans or anything to mark your chili.
Casi ain't a cake walk many really great cooks and excellent chili. Like bbq if your in the click and know what scores you'll at least show.
