Fixed a double batch this morning - instead of dicing the peppers and onions, I used my wife's new Vitamix blender to make a "veggie puree". So far so good...

This is the recipe on my Chili Seasoning labels, a couple of folks pinged me for the recipe:

1 lbs chili meat
1 lbs sausage
brown, drain and reserve.

Add to crock pot:
sausage and chili meat
1 cup of water
1 chopped yellow onion
1 chopped red bell pepper
1 chopped green bell pepper
1 can tomato soup
4 - 6 tablespoons of SB Chili Seasoning
salt to taste

Cover and simmer on high for 4 - 6 hours.

*optional (recommended)
1 can kidney beans
1 can pinto beans

** Also IF you use the beans. Instead of 1 cup of water, drain the beans and reserve the beans to add later. Add the bean stock instead of the 1 cup of water. Then add the beans to the chili just before serving.

Yield is 8 cups. I normally double the recipe.

Top with shredded cheese, chopped onions and pepper sauce. Serve

beautiful chili

I agree, except I just run all the veggies through the food processor

did you use ground meats
or chunks of meat and cook them down til they fell apart ;)
how my grandmother taught me

she solved the Texas "no beans" chili problem by preparing the beans separately
and serving them in the bowl with the chili when it's served
but we never put the beans in the pot when we're cooking the chili

my grandmother was the cook on my granddad's drilling crew the first 10 years they were drilling
(1918~1927 - Burkburnett, Electra oil fields)
she cooked it all in cast iron, usually dutch ovens
all her chili was cubed chuck
and it was her idea to cook the beans separate for the bean/chili lovers
that way the "no beans" folks got what they wanted too

one more thing to add
when I brown off my cubed chuck
I season it
then I brown it off on my grill pan on my grill with hickory chunks under it
