3am Heartburn Surprise - chili recipe

Ok, here is my chili recipe. This is a fairly mild one, but has a lot of depth to the flavor. Obviously, this isn't going anywhere near a comp, but I enjoy the chunky texture and finish the alcohol adds. Take the time to brown everything as it will build some big flavors toward the end.

Dang. Never realized how long this was until I had to write it out. Haha.

2lbs course ground tri tip
1lbs Salsiccia
3 strips of hickory smoked bacon, diced

3 (15 ounce) cans mild chili beans, drained (I know, I know. We do things weird here in Stl.)
2 (28 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste

1 Large yellow onion, diced
3 stalks celery, diced
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
2 Jalapenos, seeded and diced
3 cloves garlic, chopped

1 bottle Guinness
½ cup Jim Beam
½ cup beef broth
1 tblspn Spicy Brown Mustard
1 Tblspn Worcestershire sauce
2 tspns Tabasco sauce

4 cubes beef bouillon
¼ cup chili powder
1 tblspn dried oregano
2 tspn ground cumin
2 tspn brown sugar
1 tspn salt
1 tspn ground black pepper
1 tspn cayenne pepper
1 tspn paprika


1. Start by browning the tri tip and salsiccia on medium heat until brown, about 30 minutes. Drain and set aside. Deglaze pan with half of the Guinness and add it to the veggies once they are done. Make sure to scrape up all of the brown bits for a little added flavor.

2. Start by dicing the bacon and frying it until about halfway done on medium heat. Once the bacon starts to brown, add in all of the veggies and let them soften and brown for approx. 20 minutes. Deglaze with the other half of the Guinness, again scraping up the brown bits.

3. Place all of this into a large stock or crock pot and set the heat to low. Add in the rest of the ingredients and cover, stirring occasionally. Let simmer for 4 hours minimum. I’ve had my best results after 8.

Leave out the celery and the likker and that is dang near my Grannies & Momas chilli bean recipe. I made a big pot yesterday in their honor.
Never met a cow I didn't like with a little salt and pepper.
