SuckleBusters Texas Chili Recipe

Thought I'd try their Texas Chili out. Here's the start; 1# fresh Chili Grind Chuck, 1/2# Med Breakfast Sausage, and 1/2# of homemade bacon.

Added the beans, and it's cooking down quite well. And yes, some days you just feel like beans. 8)
I did learn that when you grind up bacon ends and pieces for chili, do not use maple bacon. Some of the bacon I used was maple, and the sweetness really comes thru. Added another tablespoon of Sucklebusters and seems to have helped.

Well, it's done. I've eaten a bowl and a half. I like the spices, and I like the process. What I didn't like was the sweetness the bacon brought. And I think next time I'll use crushed tomatoes vice tomato soup. But very happy with the first run.

Good idea! I usually do that too with an onion, green pepper and red pepper. :salut:

I usually sneak in a couple fresh jalapenos too...we like it a bit hotter. :cheers:

Never tried bacon but have used venison, plain ground pork and ground turkey with generally good results.

I had a bag of ends and pieces of homemade bacon of which about half of it was maple bacon. There was just too much sweetness in the bacon to overcome. My fubar. My comment about crushed tomatoes next time is just me tweaking things. And I've been working a lot with roasted jalapenos in sausage, may have to try that in the next batch.
