Hot chilly sauce.....

Postby Russ » Fri Jan 12, 2018 5:05 pm

Once a year I make this, I got the idea from different posts on here and my own experiences cooking. Pics to follow. I started last night and ran out of time. Wife bought 3 bags of red capsicums (7) per bag. Cut in half and deseeded then grilled skin side down until blackened mostly all over, then I normally take black skin off but last year I got a good comment from a friend, they liked the burnt charcoal taste so I've left a bit more of the blackened skin on. In a pot now with white vinegar sugar and about 200 chillies from wife's garden, these are frozen from last season. We are mid winter here so wife's picking chillies daily now.

On a 1-10, how hot are these Russ ??

Sounds great, I'd love to try this for some Sirloin chili but I'm not too tolerant with real hot stuff.

My kids are better critics.

Sounds great. Similar to Sriracha maybe? I love that stuff

Result was around 4 litres cost about $3 a litre. My kids love it on their eggs in the morning.

Yip, old school counting, a guy I worked with was a stock agent 40 years ago, he used to count in groups of 6, easy for counting sheep as they were drafting or moving. I can't do that, lol.

Not enough fingers and toes to get to 200…I got fired when they asked me to count to 21 :)

Kids loved the sauce and the heat, they went home with a 750ml bottle and a jar each of my home made strawberry jam.
I think the addition of the brown sugar improved the sauce.
