Found some beef chuck on sale, cheaper than brisket. So thought I'd give this a try. Did a butterfly cut on these two roast, and rubbed them with my favorite double garlic butter rub, and put them in the GMG DB to smoke them just as I would a brisket. More pictures added as process proceeds.

Can't wait to see the results. I introduced myself to some nice Chuck Roasts for some Beef Soup last week and was really pleased with the results.

Here is the final product. Happy, Happy, Happy. This will be vacuum sealed and frozen until I'm ready to use it. It will then get diced up, and add to the chili pot with an ample dosing of SuckleBuster's Chili Seasoning.

Where is the chili? Did you cook chili con carne or did I misunderstand? Or was it just a sauce or a side dish with chili for meat?

Yes you could, but I would have pulled it earlier. And run it through the grinder similar to what you do for Boudin. But I think it excels as a quarter inch dice in the chili pot.

Chopping the meat would make a much better chili than grinding it. Texture is everything. Or even just pull out apart some and let the chili pot do the rest of the work for you. Mmmmmm good
