Jalapeno Infused Bacon

Did an experiment with 3 half pork bellies. Included some fresh roasted jalapenos in my wet cure.

Cold smoked for six hours

Not as much as I wanted. No heat, but a small amount of flavor.

Nice! I also wondered how the jalapeno turned out for you. I've not yet been able to get what I want from its incorporation :( My next step is injection.

Be very careful injecting. It's very easy to blowout and honeycomb the internal fat. Been there, done that. I think the best answer is going to be in the steeping of the cure with the right amount of jalapenos in it.
