Toby, found out tonight we are having merit badge college for our scouts that day and I am not going to be able
to attend the get together. Sure would like to attend but they are short on instructors this year.

What kind of count are we looking at here? I am looking in to making arrangments now for a 2 night stay in Sherman TX. Is there a Sams/meat market close by so I can stop and pick up some pork butts or anything else? I dont think I can make anything for the pot luck being so far of a drive and living out of a hotel. Looking forward to a good time.

Is the sausage making going to be mostly pork butts?
On a mission to show the Wife a Good BBQ is worth the money.

We have a decent amount of folks who are planning on attending. It's still a month away and things do come up, but so far it looks like Papa Tom, 3 Star Redneck, Woody Wood, Bluz, Bauer8It, bigbob73 and ceaves + a friend of his. I'm sure more will be added as we go along.

Also, there are plenty of places to get meat locally. Sams is where I get all of mine.

I got 2-2 packs of butts in the freezer now. Local store has them for .98/lb still, may go buy another pack, that'd be about 55 lbs of butt and I'll bring one pack to the party.

Meat & sausage casings are the main things you will need to bring. As for motels/hotels, Hotwire.com has 2-star rooms for $35 and 2.5-star for $52 in Sherman. These rooms will be about 10 min from the property.

Im sitting in bed in Pottsboro right now visiting family for the holidays. My Wifes family lives here so we'll take any excuse to come in from Lubbock and say hello.

Im 100% in just tell me "what" to bring... Remember Im still a rookie at this so just saying "bring meat" does nothing for me. Just got my first smoker so look fwd to seeing what all it takes to make sausage.

Also if anyone needs any help with the area or afraid they might get lost PM me and Ill give you my number and guide you there.

Ok, I'm bringin about 18 lbs of raw butts and some casings from academy. Should I bring the collagen or the stinky ones ?

We made sausages at our last get-together and used some collagen casings on a batch of them. Conclusion - the collagen casings are super easy to stuff, but next to impossible to twist into links. We ended up having to tie off each individual link and by the time we finished, I vowed to never try that again. If you want to make long sausages, they would be fine I guess. Just don't expect to make bun length sausages.

All that said, maybe somebody knows a trick we didn't. If so, I'm all ears.

I looked up what a expert said about collagen casings for link sausages and he said collagen is really made for industrial use where they need the long casings to keep the machines running and have the equipment to link the sausages. For home use stick with natural casings.
