I'm thinking about making a big pot of tortilla soup or chicken and dumplings - something different than bbq. Either would warm us up if its a cold day. What do you all think?

I made ten pounds of summer sausage one day last week. Fun experience, my second time making sausage. I may try to make it up there, just depends on what the wife and daughter have in store that day.

Really not bad if you ahve multiple people and all your seasonings ready. I did 5lbs reg summer and 5 jalapeno cheese gave them away as gifts to neighbors and friends along with a dozen tamales and 1/2 lb of smoked cheese all home made. Pretty good gifts, lol.

Count me in. I haven't stuffed any sausage in a long time. I've got the recipe for the Gooch Blue Ribbon German Style Sausage that was made in Abilene. I'll bring that with me.

Ok, as far as stuff to bring for the sausage, I can do meat, spices, casings, and a grinder. will that do it?

That should do it. Actually, you don;t need spices unless you just want to. Papa Tom is supplying spices and I think I'll just have a donation jar set up for him to replenish his supply. :thap:

Hello to all, I slid over from the pelletheads site where I heard about this. It sounds like a great time and I'm planning to come up from Bedford (DFW). I have pork butts & some arm roast, & sheep casings. I've made fresh sausage before, but I'm sure I'll learn a lot of good techniques & recipes up there. I have to leave mid-late afternoon because I have to work a midnight shift Saturday night, but I'll be there at start-up. (It will keep me out of all your beer, anyway!). I know where Pottsboro is, but I haven't seen an address yet. Thanks for doing this, Dan

As previously mentioned, if you need a hotel nearby - Hotwire.com has some excellent rates for the area. Sherman & Denison are both nearby (within 10 min) and have hotels that can be reserved via Hotwire. You can book direct with the hotels if you wish, but you will pay more.

Here is a link to a map I created in Google maps. I wasn't very good at customizing the map, so if somebody can make a better map - have at it! :lol: I expect most, if not all will be coming from the south or west.

From Dallas
Hwy 75 North to Sherman
Exit Hwy 82 West
Exit FM1417 and turn right
Turn Left on Refuge Rd (Look For Hagerman Wildlife Refuge Sign)
Turn Right on Airport Rd (immediately after railroad track)
There will be a railroad track that runs along the east side Airport Rd. There is only one turn in rock drive on Airport Rd that crosses the railroad track. You will need to turn in that drive and you will see the barn (metal building) and house straight ahead. I will post a sign at the entrance on Airport Rd to help.

From Northwest Dallas Area
Take Hwy 289 North all the way to the south side of Pottsboro (if you see the Welcome to Pottsboro sign, you went too far)
Turn Right on Refuge Rd
Turn Left on Airport Rd
There will be a railroad track that runs along the east side Airport Rd. There is only one turn in rock drive on Airport Rd that crosses the railroad track. You will need to turn in that drive and you will see the barn (metal building) and house straight ahead. I will post a sign at the entrance on Airport Rd to help.

From the West

Papa Tom and I talked regarding spices. He has quite the spice selection and as he says "enough for a small elephant" :lol: . He is going to bring them all to the party for everybody's use. That said, I will have some sort of donation jar set up so we can give back to Tom and he can replenish his supply after the party. I don't want Tom to be out of pocket after contributing to our sausage habit. :wink: If you know what kind of sausage you want to make and bring all the spices for it, that's up to you. Papa Tom is just making it easy on the rest of us by having most any spices we need at our disposal. Thanks in advance, PT! 8)

Is there a list of what is needed or what everyone is bringing? I want to bring some pork butts because it is easy for me to hold on a 6 hour drive. I am up to bringing more if it is needed but don’t know if everything is covered.
On a mission to show the Wife a Good BBQ is worth the money.

That should be plenty. It looks like there is going to be a big turnout. If everybody shows up, we will have tons of meat. I'm almost afraid we're going to have more meat than we will have equipment to process it. I think we'll have plenty of grinders, but may be a little short on stuffers. Just bring what you can and we'll figure out the rest. :wink:
