Sausage Making Get-together January 22, 2011!

OK guys & gals - we had such a great time this past spring at Papa Tom's place at the 1st Wurst get-together. We learned a lot, worked a lot, drank some cold ones and ate well not to mention making some new friends. Everybody brought some casings and some meat (pork, wild pork, venison) and we all shared and went home with plenty of sausages (andouille, summer sausage, jalapeno cheese brats, cheddar brats, polish sausage, etc..).

I have been kicking around the idea of hosting another one after the first of the year. I've got access to the perfect place for one whatever the weather may be with lots of refrigeration, sinks, tables, etc.... I don't have a date nailed down, but I am thinking of sometime in February or March after the holidays when everybody gets settled back down. Nothing is set in stone, but I just wanted to put this out there to see how many may be interested to see if it would even be worth it.
You don't have to have previous sausage making experience. Papa Tom is our sausage guru and when I talked to him he said he would like to come. Others of us have minimal experience, but enough to get everybody going. A few of us have grinders and stuffers which should cover the equipment needs.
I know I am on the far north end of most of our local members, but it really isn't as far as some of you imagine. The property is in Pottsboro, Texas which is 1hr 10min due north of downtown Dallas. We would need to start early, as sausage making takes some time. I think it would be a great time. Y'all let me know what you think or ask any questions you may have.
