Jan 22 has my vote as well.
Right now I'm off every weekend, but a guy got hurt and more than likely I'll be going back to shift (every other weekend) so that'll cut into any thing I do.

Suggested items to bring?
I can do any of these dates if I can convince a caring soul at work to cover my shift. Sooner is ok with me too.

QShack - I'm trying to make this happen in far north Texas (Pottsboro) about 70 miles north of Dallas. Cost is free - just a get-together for everybody to learn and make sausage. We're trying to pick a date that will work for most now.

Alright folks - January 22nd it is.
I would like to start getting a head count so if you are serious about attending, please send me a PM and let me know. There should be plenty of room for us. As you know, the weather can be very cold this time of year, or can be quite pleasant - ya never know. The good news is that we will have plenty of shelter from the weather and room to work and make sausages no matter the weather situation.
What are everybody's thoughts on doing a potluck style lunch? We will have access to a trailer pit and a charcoal grill too if we want to grill up some sausages or whatnot. I'm open for any suggestions. This will be a good time to meet some new folks and visit with others you may have met in the past.
I hope to see some of you comp folks since it is your off-season! 
Here is a shot of the inside of the barn where we can make the sausages. There is a woodburning stove and a patio heater in there for heat if it's really cold.

Gonna try to make it Toby, put me down for beans and a dessert. I already have about 30lbs of pork butt in the freezer, probably gonna do some brats and JC brats.Hollar, if ya need to bring anything else brutha.

Prob need to start by 9am or so. The last time we did this, we were still going at 10pm. It's an all day event.
