Stuffing horn

Postby sancho » Sat Mar 23, 2013 6:41 pm

I'm stuffing some beef middles (about 55mm) and I'm wondering what size stuffing horn to use. I'm stuffing with a LEM 5 IBL vertical stuffer. Can I just use the one I use for 35MM, because that's the biggest I have that will fit the LEM, or do I have to get a bigger one? I have a 2" bagging horn for bulk sausage but it won't fit my stuffer; it's an attachment for the LEM #12 grinder I have which is painfully slow to stuff casing with. I thought I would get some suggestions before I broke everything out. Please Help!

I ended up using a 1" stuffing horn and managed fairly well. I've used it to stuff summer sausage in fibrous casings but never natural. It worked out pretty good.

Good to hear I haven't used a small horn to do a large casing (that I remember) but I expected that it would work fine. I typically use a little smaller horn than the casing just to give a path for air bubbles to escape.
